How do I get a high quality rip from a DVD?

I am trying to put together a reel of my work that I have recorded on DVD’s. I am ripping specific information from various discs, and editing these clips into one final DVD. I am using FREE DVD Ripper to rip the information, and the output options are video CD (mpeg1), Super Video CD (Mpeg2), AVI (Divx, yuv) or mpeg4. I can save these files as AVI or mpeg before I burn them back onto a DVD. Any suggestions so that the quality of the DVD clips aren’t so pixelated? Thank you
